A thin, dark-red table sauce built on ketchup, barbecue sauce, and hot sauce, served over or alongside fried chicken at Black-owned chicken shacks and rib joints on Chicago's South and West Sides. It is sweet first, smoky second, and only faintly hot — mild is a heat level, not a lack of flavor. The standard order is the sauce poured over the whole box, chicken and fries and white bread together, so the bread soaks.

Mild sauce is a product of the Great Migration South and West Sides of Chicago, where cooks from Alabama, Mississippi, and Arkansas set up fried chicken and barbecue counters after the Second World War. Harold Pierce, out of Midway, Alabama, opened the first Harold's Chicken Shack at 47th and Greenwood in 1950; the Rickette family opened their first chicken shack in 1963 and the Uncle Remus brand in 1969. Charmaine Rickette, who runs Uncle Remus today, says her father began serving mild sauce in the 1960s after watching customers mix ketchup and hot sauce themselves. No single inventor is documented, and the honest account is that the sauce was arrived at collectively across a handful of Black-owned counters — a point with real stakes, as the 2020 arrival of a white-owned bottled brand made plain.
